The markings and symbols testify to these controls and guarantee it is a DOP product. - the name "ASIAGO" on the side
- the cheese logo
- manufacturer’s code which identifies the cheese maker
- casein code which gives details of the date of production, production information and names of the dairies.
- letter of the alphabet which indicates the month of production
- initials of dairy
The Asiago wheels which are entitled to the additional "Product of the Mountains" label are marked accordingly on the side of the cheese.
At the end of the maturing period, the words "Product of the Mountains” and the DOP logo are also fire-branded onto the side of the wheel.
