ASIAGO WITH WINE

Fresh Asiago: the cheese’s delicate flavour calls for similarly delicate wines such as light, fresh white wines or light, soft rosés. If served as an aperitif, it also goes well with dry sparkling wines served at 7/8°C.

Some examples: Soave, Vernaccia di San Gimignano, Biferno Rosato, Franciacorta Spumante Brut, Vespaiolo Spumante.

Mature Asiago: wines should be chosen depending on how mature the cheese is. The older the Asiago, as in the case of Stravecchio, the more structured the wine should be, even aged in oak barrels. The cheese should not be served with red wines which have been aged in American oak barrels as the typical aroma of vanilla they impart is incompatible with its organoleptic characteristics.
 
Some examples: Cannonau, Cabernet Colli Berici, Rosso Breganze, Colli del Trasimeno rosso, Solopaca.
